
Ingredients:
– ¾ cup raw cashew pieces (soak for at least an hour and then drain)
– 3 cups water
– 1 clove of garlic
– 1 red bell pepper
– 1 green bell pepper
– ¼ cup marsala cooking wine (you could also use lemon juice instead!)
– 1 tablespoon black pepper (use less to make it less spicy)
– Spinach (however much you prefer)
– Brown rice noodles; cooked according to directions on bag/box
Instructions:
1. Combine the soaked cashews with 2 cups of the water and blend together.
2. Pour mixture into a pot/pan over medium heat.
3. Add in bell peppers, the marsala wine, and black pepper; simmer, and once it starts thickening, add in the remaining 1 cup of water.
4. Once the sauce is thickened to the right consistency, turn off heat and mix in spinach.
5. Serve over the noodles and add some salt. Enjoy!!!
